Celebrity chef Massimo Bottura, whose Osteria Francescana in Modena, Italy has been named the world's best restaurant multiple times, has officially opened Torno Subito in Miami's Design District—and the culinary world is taking notice.
The restaurant, set inside a century-old historic building with soaring ceilings and airy skylights, is being led by Chef Bernardo Paladini, who has worked alongside Bottura for roughly 15 years.
"I like to think of myself as an Italian guest in Miami," Paladini shared. "The menu reflects a Floridian sensibility through local crab, key lime, and risotto with saffron cooked in shrimp bisque that feels like a nod to seafood paella."
Bottura's philosophy of honoring tradition while playfully rewriting the rules is evident throughout the experience. Bright pops of primary colors, pastel-shaded plates, and Gucci florals on pillows and banquettes create a casual-chic atmosphere that feels distinctly Miami.
The tortellini has already become a standout—filled with cured pork in a creamy Parmigiano Reggiano sauce, it's inspired by Bottura's childhood memories of his grandmother. The pasta is hand-rolled by a husband and wife team.
"Oops, I Burned the Key Lime Pie is my playful riff on Massimo's iconic dessert," Paladini explained. "Key lime semifreddo, citric crumble, and lightly smoked lime ice cream—it's a must-order."
Valentino Longo from the Italian aperitivo bar Vice Versa has created the cocktail program, featuring aperitivo-style drinks with effervescence, bitter, savory, and citrus components.
The restaurant offers two tasting menu options: the Classics Remix at $125 and the ten-course La Dolce Vita at $165. Valet parking is just $5 outside the Moore Building—surprisingly affordable for Miami.
